Easy Breakfast Casserole This is a super simple casserole made with cheesy eggs, sausage, and bacon. This Easy Breakfast Casserole is perfect for long lazy mornings with family and friends.

Sunday breakfast is a pretty big deal at my house.  With all the hustle and bustle going on during the week, we barely have time to eat breakfast, much less make anything in the kitchen.  So on the weekends, we like to whip one of these up.  Especially, if we have family or friends over.

The best part about this Easy Breakfast Casserole is it how easy it is to make.  You can also customize it to your tastes by adding more vegetables or make it with only meat and potatoes.

Instructions
  1. Preheat oven to 350 degrees. Grease a 9x9 inch baking dish.
  2. In a large skillet, cook chopped bacon over medium-high heat until crisp. Remove and drain on a paper-towel lined plate. In the same skillet and add sausage and cook completely until no longer pink. Remove and set on the paper towel lined plate to drain excess oil. Then lower heat to medium and add in the onion and green bell pepper and cook until tender. Remove and set aside.
  3. In a large bowl, whisk together eggs, milk and seasonings. Add veggies, sausage, 1/2 of the bacon and 1/2 of the cheese.
  4. Transfer to prepared baking dish, cover with remaining shredded cheese, sliced tomatoes, additional crumbled bacon and bake uncovered for 45-50 minutes or until the center comes out clean when inserted with a knife.
  5. Serve and Enjoy!
Recipe Notes

We like to serve with a bit of avocado and salsa.  You can also mix in mushrooms, green onions, red bell peppers instead of the green, or one of my favorites is to add spinach!
